Tomato Soup with Organic Extra Virgin Olive Oil OleoYebel

Ingredients:

  • 1/2 kilo ripe organic tomatoes.
  • 1/2 green organic pepper.
  • 1 clove of organic garlic.
  • 1/2 organic cucumber
  • 1 dl Organic Extra Virgin Olive Oil OleoYebel.
  • 4 soup spoons of wine vinegar.
  • 1 slice of organic bread (if you don’t have organic bread use your usual bread)
  • A little fine salt.

Method:

Scald and peel the tomatoes and place in the jug of the mixer, add the peeled cucumber sliced, the pepper, the garlic and the bread soaked in water.

Grind for a few seconds and add the salt, the vinegar and the Organic Extra Virgin Olive Oil OleoYebel tasting to rectify if necessary.

Pass through the sieve to a soup tureen and leave to cool for one hour.

Serve in individual bowls with croutons, diced pepper, onion, tomato and hard boiled egg.

Tip:

We recommend that you have the tomato soup according to the season, at room temperature in winter and very cold in summer. For it to be very red you can use have salad tomatoes and half pear tomatoes, both very ripe.
