Oysters with Organic Extra Virgin Olive Oil OleoYebel

Ingredients (serves 4):

  • 12 oysters.
  • 1 lime.
  • 12 ml chlorophyll.
  • Flour and egg for batter.
  • Organic Extra Virgin Olive Oil OleoYebel.
  • Salt.
  • Rosemary

Method:

Open the oysters and loosen them with a knife. Clean the coral remains carefully and remove the first water. Pass the rest of the water to a glass.

For oysters with chlorophyll, place a segment of lime on 4 oysters. Pour over each one a little water, a drop of chlorophyll and a few drops of olive oil.

For smoked oyster, remove 4 oyster from their shell and place them in a sieve.

In an old saucepan place egg cartons with some sprigs of rosemary. Pour in a little rosemary alcohol and set fire to it. When they have burnt, introduce sawdust ( to put the fire out) and the sieve with the oysters. Cover and leave to smoke for a few seconds.

Return the oysters to their shells and pour a little of their water over each one.

For oyster in batter, trim the oysters leaving only the core. Season, cover in flour and egg and fry in a fry pan with olive oil. Drain on kitchen paper.

Finally, place the oyster on a plate and decorate with Organic Extra Virgin Olive Oil OleoYebel.

If accompanying with a wine, a white wine is best.
